Garlic and Winter Greens
Time capsules don't usually grow food, but a family in Kyle treated their October garlic planting exactly like one. Nine months later, they pulled up bulbs bigger and more flavorful than anything from the grocery store, proof that patience is its own kind of harvest.
October shows us that this is garlic planting season in Central Texas, along with a final push for cool season greens. Patience now means a reward that arrives months down the road. Plant garlic cloves in October for a harvest next summer. Direct sow spinach, turnips, and collards through the middle of the month. Keep asparagus crowns and rhubarb crowns in mind if you want perennial crops established before winter. Winter is coming, so what will you plant now and forget about until summer?
